Breakfast Recipes For When You Are Running Late

There are certain mornings when you wake up an hour before work or school, take your time getting dressed and prepare yourself a hearty breakfast meal to kick-start your day with energy. And then there are days when you struggle to get to your seat at the office or school on time because you missed your alarm that went off god knows how many hours ago.

You pray to the Lord that the boss or teacher somehow misses you being late and you do not get the early morning nagging that we all loathe. And breakfast on these days? You can forget about it!

But does your stomach forget about it? No.

And does it really have to? Not at all! At least not with these super quick recipes for when you are running late!

  1. Coffee Mug Egg Scramble

Time required: 5 minutes; Prep time 3 minutes and Cook time 2 minutes.

  • Whisk 2 eggs, some cheddar cheese, tomatoes, other veggies, salt and pepper in a bowl.
  • Coat a microwave-safe mug with some cooking oil/ spray and pour the egg mix in.
  • Microwave on High for 30 seconds, then stir.
  • Microwave for another 70-80 seconds until the eggs are cooked, puffed and set.
  • Eat straight from the cup.
  1. Peanut Butter Banana Toast

Time required: 3 minutes

  • Take whole wheat bread and lightly toast it.
  • Spread peanut butter on top and cut half a banana into thin slices.
  • Add the slices to the buttered pan and top with another slice of bread.
  • Carry it in your hands and eat on the way.
  1. Yogurt Parfait

Time required: 3 minutes

  • Prepare yogurt and cut fruits of choice such as blueberries and strawberries beforehand.
  • Take a large glass or cup and layer with yogurt and fruits alternatively.
  • Top with cereal, almonds, pistachio or any other nuts.
  • Scoop it to enjoy a refreshing breakfast.
  1. Chocolate Peanut butter banana

Time required: 1 minute

  • Peel a banana and layer the top with peanut butter and chocolate jam.
  • Sprinkle Choco chips for added taste.
  • Use a pick to make eating easier or carry it around while you get ready.
  1. Egg in a hole:

Time required: 4 minutes

  • Heat a skillet pan and melt some butter in it.
  • Cut a hole into a bread and place it on the pan. Use a knife or cookie cutter to cut the hole.
  • Crack an egg into the hole and sprinkle salt and pepper to taste.
  • Let the egg cook and turn it upside down to make the toast as brown as you prefer.
